The number of food service establishments in Russia continues to decline. As of November 2025, there were about 115,000 cafes, restaurants, and bars in the country, which is 3.1% less than a year earlier, according to "Kommersant". The most significant impact was felt by popular chain formats. The number of sushi bars decreased by 7.5% over the year, while pizzerias saw a 6.4% drop. Experts note that these segments are particularly dependent on logistics, imported ingredients, and stable consumer demand. Industry research also confirms the decline in activity. According to Focus Technologies, the number of orders in cafes and restaurants in Moscow decreased by 5% in January-October 2025. At the same time, there is an increase in the migration of customers to the segment of ready-made food and delivery: the turnover of these services grew by 32% over nine months. Market participants point to structural problems in the industry. Over the past few years, the profitability of the restaurant business has almost halved, from 20-25% to 10-12%. The pressure comes from rising costs for personnel, rent, and products, tighter regional restrictions on alcohol sales, and high credit costs, which lead entrepreneurs to delay launching new projects. Despite the reduction in the number of food service establishments, business registration statistics in this sector showed growth. Experts explain this by the relaunch of closed projects and the emergence of niche, compact formats. However, overall, the market remains in a phase of contraction, and the reduction in the number of establishments is expected to continue in the near future.
